Just a little note -- if you have special problems with wheat flour, you should be tested for celiac sprue. This is an intestinal abnormality where a person is unable to tolerate wheat of any kind. It is one of those "hidden" diseases where people are miserable for years before they find out the cause of their problems.

I have a friend who is a nurse who used to work for an orthopedic surgeon. They had a 2-yr-old who came in for surgery to repair some congenital problems with her hips. This child was very underweight for her age, but everyone in the hospital just ASSUMED that this was because the mom was poor and single and a teenager and wasn't feeding her child correctly and that after a couple of weeks in the hospital she should get some more meat on her bones. Well the child did not gain weight in the hospital, and finally my friend asked her own kids' pediatrician to look at the baby's chart. He immediately suggested testing the baby for celiac disaease, and she had a severe case of it. All those years this baby had suffered from malnutrition because everyone just assumed that the mom was a bad mother!
